With a handheld mixer whisk together eggs and milk
Add all dry ingredients - flour, baking powder & salt.
Gently whisk until mixed.
Add the water, vinegar and oil
Using the mixer mix until well combined making sure there is no lumps. Take care not to over-mix.
Rest for at least 30 minutes at room temperature.
Fry on non-stick (preferably ceramic) pan at medium heat using approximately half a cup per pancake. You will know the heat is warm enough when the batter sizzles the moment it hits the pan.
