
Basil Pesto
Delicious fresh pesto for pasta, pizza or other
Equipment
- 1 Mortar & Pestle
- 1 Blender/Mixer
Ingredients
- 2 cups Fresh basil De-stemmed
- 1/2 cup Olive oil
- 1/2 cup Freshly grated Romano or Parmesan cheese
- 1/3 cup pine nuts
- 1 teaspoon Salt and fresh ground black pepper
Instructions
- Add basil leaves to grinder and crush/blitz
- Add rest of ingredients and mix until puree
- Store in favourite jar or use fresh
Notes
If storing, use clingwrap and press air out of jar (ending with clingwrap laying on the pesto) to store longer and prevent oxidation from causing the pesto to brown.
