Ingredients
  

Batter

  • 2 Eggs
  • 1.5 cup milk
  • 2 cups Plain flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1.5 cups water
  • 1.5 tablespoons white vinegar
  • 1/4 cup vegetable oil

Savoury Toppings

  • beef mince
  • Asparagus
  • spinach leaves

Sweet Toppings

  • Nutella
  • Bananna & syrup
  • Cinnamon sugar
  • Ice cream
  • Blueberries

Instructions
 

  • With a handheld mixer whisk together eggs and milk
  • Add all dry ingredients - flour, baking powder & salt.
  • Gently whisk until mixed.
  • Add the water, vinegar and oil
  • Using the mixer mix until well combined making sure there is no lumps. Take care not to over-mix.
  • Rest for at least 30 minutes at room temperature.
  • Fry on non-stick (preferably ceramic) pan at medium heat using approximately half a cup per pancake. You will know the heat is warm enough when the batter sizzles the moment it hits the pan.
