Chicken Rice Paper Rolls
Simply delicious. A light meal that can easily be used as a leftover lunch for the next day.
Ingredients
Rice Paper Rolls
- 50 g rice vermicelli noodles
- 1 lebanese cucumber halved lengthways
- 12 large rice paper wrappers aka banh trang
- 175 g poached chicken shredded
- 60 g iceberg lettuce coarsley shredded
- 1 carrot julienned
- handful coriander leaves
- 12 mint leaves
Dipping Sauce
- 30 ml fish sauce
- 15 ml lime juice
- 15 ml rice wine vinegar
- 1 tablespoon peanuts roasted, finely chopped
- 2 teaspoons shaved palm sugar
- 1 red chilli finely chopped
- 1 garlic clove crushed
- 10 ml water
Poached Chicken
- 200 g chicken breast bone in, skin on
- 500 ml chicken stock
- 2 carrots
- 2 celery sticks
- 2 bay leaves
- 5 peppercorns
- salt to taste
Instructions
Poached Chicken
- Place all the ingredients in a medium sauce pan, ensuring the chicken is just covered in liquid.
- Turn on the heat to medium, wait for the liquid to start simmering then turn it off and let the chicken cool down in the stock.
- The chicken should be cooked in about 30 minutes, but the longer it cools in the liquid the better.
Dipping Sauce
- Combine all the ingredients in a small bowl and stir until the sugar dissolves.
- Set aside.
Rice Paper Rolls
- Place the noodles in a medium heatproof bowl and cover with warm water. Soak for 10 minutes or until tender. Drain well.
- Scoop the seeds out of the cucumber with a small spoon. Cut into 12 batons.
- Making one roll at a time, immerse a rice paper wrapper in a bowl of warm water, then drain immediately. Top the bottom third of the wrapper with a bundle of the noodles and a drizzle of the dipping sauce, then add some chicken, a few strips of lettuce, a strip of cucumber and some carrot. Make sure the pile is neat. Top with some herbs and then turn up the bottom of the wrapper to cover the filling. Carefully turn both sides of the wrapper in on top of the first and roll up gently to enclose the filling. Repeat with the remaining wrappers and filling.
- Serve with remaining dipping sauce.

Simmer Chicken longer if outside temperature is cold
